My Big Fat Greek Low-Carb Walnut Cookie

Now here's a recipe that my even friend Dr. Nick Yphantides, author of the book "My Big Fat Greek Diet," might enjoy! LOL! It's a Greek cookie that's low-carb, too! How about that?

Made with lots of great ingredients, including SweetPerfection and erythritol (this sugar alcohol that does not cause gastric distress like maltitol does can be hard to find, but I know you can get this from my friends at Low-Carb Central -- call or e-mail them to inquire about purchasing some), you will find this cookie to be a pleasant surprise with the olive oil in it. Go ahead, take the plunge! You might find you could eat this healthy cookie every single day!

LOW-CARB GREEK WALNUT COOKIES

2 c. light extra virgin olive oil
2 eggs
1 1/4 c. SweetPerfection
1 1/4 c. erythritol
4 1/2 c. almond flour
1 T. powdered ginger
2 T. vanilla
4 c. chopped walnuts


Preheat oven at 350 degrees.

Mix olive oil, SweetPerfection, erythritol, ginger, and vanilla together in a bowl. Add eggs and mix again. Then add the flour and mix some more. Finally, add the walnuts and mix thoroughly.

Press mixture into large cookie sheet and bake for 30 minutes.
