Now that I've purchased some of that coconut flour you mentioned in a previous blog, I can't wait to make l-c chocolate chip muffins! <br /><br />I did make berry muffins, and they were fab. I don't know if you remember, but I had asked you if the resulting baked goods would taste coconutty. These muffins did have a coconut taste when they were still warm. However, upon cooling, all coconut-ness disappeared, and they tasted like yummy muffins. I may get even better results with half coconut flour, half almond flour.<br /><br />Oh, and instead of Splenda -- which I know many low-carbers love, but I think tastes funny when it's baked -- I used erythritol instead.
