This Berry And Mousse Parfait will really make your day!

One of the fun things about livin' la vida low-carb is to watch people squirm and crinkle their nose at your when you tell them you don't eat sugar or traditional sweets. If I had a dollar for every time I got that "look" from people or when they gasp in utter disbelief that I would completely shun those things they think they could never live without (namely sugary desserts!), then I'd be a millionaire today!

But isn't that what people think when you tell them you are on a low-carb program and have eliminated sugar from your diet? They just automatically assume that ANYTHING that doesn't have sugar in it MUST be disgusting. But they couldn't be more wrong if they tried and this recipe proves that point.

While your body certainly doesn't need all of the excessive sugar, including hidden sugars like high fructose corn syrup and more, found in a lot of sweet baked goods and desserts these days, there are alternatives to those things I like to call "rat poison" that will satisfy your need for sweets without causing your weight to balloon to an unhealthy level.

This quick and easy 6.5g net carbs Berry And Mousse Parfait recipe will show you just how good sugar-free, low-carb desserts can be without ever feeling like you are being deprived. I used to joke with my wife whenever I would eat something like this that I am "suffering on my diet" eating like this. LOL! So why don't you start "suffering," too?! ENJOY!

BERRY AND MOUSSE PARFAIT

1 cup strawberries, divided
1 cup raspberries, divided
1 tablespoon plus 1 1/2 teaspoons granular sugar substitute, divided
1 1/4 cups heavy cream
1 tablespoon vanilla extract
1/4 cup mousse mix


1. In a blender, puree 3/4 cup strawberries and 3/4 cup raspberries with 1/2 teaspoon sugar substitute. Coarsely chop remaining 1/4 cup strawberries and fold into the puree.

2. In a large bowl, whisk 1 cup cream, remaining sugar substitute and vanilla until soft peaks form. Whisk in mousse mix; whisk until very stiff. Whisk in remaining 1/4 cup cream.

3. In a parfait glass, place 1/4 cup of the berry mixture. Top with 1/4 cup mousse mix; repeat layers twice. Top with a few reserved raspberries. Repeat procedure to make three more parfaits.

For chocolate mousse, omit vanilla and add 1 tablespoon cocoa powder and sugar substitute to taste.

Prep time: 15 minutes
Carbohydrates: 13.5 grams
Net Carbs: 6.5 grams
Fiber: 7 grams
Protein: 4 grams
Fat: 28 grams

Well since the work gay has to mean something else besides happy, the title seemed to imply something else. Especially since the next line was make your day, I thought you might have misspelled the title, my mistake.
