Red Lobster™-Like Low-Carb Cheddar Biscuits


Pinch me, I think I've died and gone to heaven now with this recipe!

One of my favorite foods before I started livin' la vida low-carb was the infamous cheddar biscuits they would bring to you when you go to Red Lobster™. That basket of hot, fresh biscuits that would literally melt in your mouth with cheese oozing out of them would make you slap your momma just plumb silly they were so good. But low-carb made that sinful delight go bye-bye, right?

NOT ANYMORE!

My low-carb buddy Elaine over at Low Carb Connoisseur has done it yet again with this unbelievable cheddar cheese biscuits recipe using a miracle low-carb product called Carbquik. If you don't have Carbquik in your cupboard, then you are missing out on one of the best-kept secrets out there!

Used exactly like the more popular Bisquik, Carbquik significantly reduces the carbohydrate content of your favorite pancake, cake and, yes, biscuit recipes and makes for a terrific dough that will make you laugh in the face of those who say you can't have bread with your low-carb diet. HAHAHAHAHAHA! Oh yes you can!

These biscuits will be done so fast I can almost smell them cooking now. And at a mere 2g net carbs a piece, you can afford to have two, or three, or...okay, you better stop now even though they taste sooooo good! This will be a recipe you will come back to time and time again.

CARBQUIK CHEDDAR CHEESE BISCUITS

2 cups Carbquik
2 ounces butter, cold 1
1/2 cup shredded cheddar cheese
1 pinch garlic powder
1 pinch salt
1/4 cup heavy cream
1/4 cup water


Preheat oven to 450 degrees. Cut the cold butter into the Carbquik with either a pasty cutter or two knives, till the mixture resembles coarse meal. Add the shredded cheese, a pinch of salt, and garlic powder and blend well.

Mix the heavy cream with water to equal 1/2 cup of liquid, pour into dry mix. Mix till dough forms and comes together, but do not overwork the dough.

Drop the dough onto a lightly greased cookie sheet approx 1 ounce size portions. Bake in hot oven 8-10 minutes until biscuits are golden brown.

Servings: 10
Net Carbs Per Serving: 2
Total Preparation Time: 10-12 minutes

This one's a keeper, don't you think? Make up a batch of these Red Lobster™-like low-darb cheddar biscuits for the office and don't tell 'em they're low-carb before they try them. Then watch their faces when you pop the news to them. They'll never believe you! That's when you can say, "See, low-carb food CAN taste good!"
