And The KODAK 'Picture Perfect Low-Carb Holiday' Contest Winner Is...

The KODAK "Picture Perfect Low-Carb Holiday" Contest is now officially over and we have selected a winner of a FREE KODAK EASYSHARE 5300 All-in-One Printer for submitting an outstanding picture of a delicious low-carb holiday menu item.

This was such a difficult decision because there were MANY outstanding entries, including a juicy capon, a mouthwatering lemon meringue pie, a creamy chocolate pudding, a sensuous French silk pie, a quick and easy cranberry sauce, chocolate-coconut snowballs, and a luscious lemon pie.

But when it came down to choosing who the winner would be, the final decision made was to award it to SHARI W. from Tennessee for her amazing mini-quiches. CONGRATULATIONS, Shari! You just won that KODAK Printer all to yourself and I KNOW you will enjoy it immensely.

"These little Mini-Quiches are tasty and make the 'Picture Perfect' holiday appetizer. Simple ingredients and a simple recipe make for the most versatile of dishes. Remember simplicity is an added plus during the hectic time of the holidays. Just make your basic quiche mixture and then add your favorite veggies, meats, and extra spices to taste. A bonus with these quiches is not only are they 'low carb' but you get the added colors of Christmas on your table."

I am nearly speachless, and my husband has temporary hearing impairment, after my screaming "I won, I won!!!. I am so excited. I have needed a scanner and new printer for a while now. This is the best news I could get today.

After several people have asked for the recipe. Here it is. It's easily adaptable to your tastes.

Got this recipe from AMY from eatinglow.com "Thanks, AMY"

The basic quiche recipe is as follows:

BASIC QUICHE
4 eggs
1 c. milk or cream
Pinch of dry mustard
Pinch of black pepper

4 to 8 ounces shredded cheese (Cheddar or Swiss) (I added cheese separately)
Beat eggs well. Add remaining ingredients. Pour into pie crust. Bake for 45 minutes at 350 degrees. Variations: Add chopped ham or any vegetable you wish, such as asparagus, broccoli, spinach (good with Feta cheese) etc



Of course I made all of these crustless.

I used a non stick baking pan.

I took the ingredients and put them in the pan in the order listed then put the quiche basic mix over the top of the ingredients. Baked 350 for 9-12 minutes. Watch or smell for when they are done.

Mexican Quiche

Shredded Sharp Cheddar
Bell Pepper
Green onion
tomato
taco seasoning meat
jalapeno (optional), but way good.

Artichoke Spinach Quiche
Added a little garlic powder to my remaining mixture

Ingredients listed in pan as follows.
Asiago Cheese
Artichoke (chopped fine)
Spinach (Chopped fine)
Asiago Cheese (lightly - note: put this on the bottom and on the top)

Onion Egg Cheese Quiche
Added a little cayenne pepper to the mixture

Parmesan Cheese
Onion
Cheese
Chopped bell pepper on top for color (green onions would also work)
Parmesan Cheese (lightly on top)
