This is great news! Now that I've purchased some of that coconut flour you mentioned in a previous blog, I can't wait to make l-c chocolate chip muffins!

I did make berry muffins, and they were fab. I don't know if you remember, but I had asked you if the resulting baked goods would taste coconutty. These muffins did have a coconut taste when they were still warm. However, upon cooling, all coconut-ness disappeared, and they tasted like yummy muffins. I may get even better results with half coconut flour, half almond flour.

Oh, and instead of Splenda -- which I know many low-carbers love, but I think tastes funny when it's baked -- I used erythritol instead. Just wonderful! I'll let you know how the chocolate-chip muffins come out :)

These are awesome! I sprinkled them on top of my sugar free chocolate cheesecake!

Netrition probably has the best price, but do buy these!
