'Picture Perfect' Contest Features Your Healthy Low-Carb Holiday Dishes


Taking a photo of your low-carb holiday foods is a snap!

Have you got your digital camera handy while you're baking up all those delicious low-carb dishes during the holiday cooking season? LLVLC On YouTube (Episode 13): The Holidays Are No Time To Chuck Low-Carb


The worst two months of your weight loss journey is here

It happens the same time year after year. Technically, it begins on Halloween and runs all the way through New Year's. Yes, it's the holiday season with all the temptations that come with it. You know what I'm talking about--food, especially very high-carb ones, are EVERYWHERE this time of year and it can seem overwhelming to your low-carb lifestyle.

What is most disappointing about this is how people rationalize eating whatever they want during the Thanksgiving and Christmas holidays because they want to feel a part of the festivities and to not make grandma upset because they didn't have a slice or two of pecan pie. It can be difficult, no doubt, but what's more important--appeasing your family temporarily by eating what you shouldn't or refusing to give in to the temptations for the permanent improvements to your weight and health.

Surprising Kevin Perhaps For The Last Time

When it comes to going on vacation, I'm the kind of person who would much rather stay home and just take in the sights and sounds of life in my area that are normally overlooked in the day-to-day living to simply relax and enjoy myself. Loading up the car with a bunch of luggage, driving umpteen hundred miles to get to your destination, and then trying to cram in activity after activity to entertain yourself is not my idea of the perfect vacation. Don't you need a vacation from your vacation when you get back?!

But one thing trumps all of that when it comes to going on vacation: seeing your family! My wife Christine has family north of us and my family is split between west and south of our home in South Carolina. We try to make the rounds every year or so and it had been a couple of years since we went to visit my mother. stepdad, brother and sister who all live in the same town. So we decided to travel down I-85 (through some horrendous traffic there and back going through Atlanta!) to see my family over the Thanksgiving weekend.

My sister Beverly was so gracious to open her home up for Thanksgiving when she heard we were coming and that we wanted to surprise Kevin. My mom had planned on going out to eat with my stepdad, Beverly and Kevin for turkey day, but my dear sister wanted it to be more special than that with us driving down to visit. She did an excellent job with the meal!

Mom cooked the turkey and brough ham and Beverly did the rest. They allowed me to cook up a batch of my mashed cauliflower and low-carb stuffing, although my mom and stepdad weren't very thrilled with either. Oh well, it wasn't for them to eat now, was it? :D

I didn't eat any of the desserts that were prepared because they were loaded with sugar and flour. But everyone made sure to tell me how mmm mmm good the chocolate pie and apple pie was. Not for me because I'm livin' la vida low-carb and those are just RAT POISON! LOL!

We didn't have a whole lot of time together over the weekend because he had some odd and end things to do, but I was able to see my brother Kevin a little. As many of you know, he has had quite a year since being told by a doctor to lose weight or die. Despite this grim warning, Kevin has not lost a lot of weight yet and his health has paid the price.

I was very tempted to tell Kevin what he needed to do to shed those pounds and get his health in order. However, more than anything else, I just wanted him to know he was being thought about, prayed for, and wished well by countless numbers of people (mostly YOU!) who really do care about him and want to see him well. He wanted me to let you know he appreciates your concern and that he is going to try to do something about his situation. We can hope and continue to pray at this point.


Kevin's a big man who has had one doozy of a life so far

One thing that shocked me was when we sat down to watch a movie together as a family on Saturday night was when mom made a big batch of brownies. The aroma in the air was just too much for Kevin to bear, so he went and loaded up his plate with 4 large blocks of brownies with ice cream on top. Keep in mind he's a Type 2 diabetic and morbidly obese! Oh, you don't know how much I wanted to scream, "NOOOOOOO!!! YOU DON'T NEED THAT, KEVIN!!!" But I bit my lip and remained silent.

I learned a long time ago that you can't force someone to change who isn't ready to change. They have to be ready and it's our job to serve as an example until they are. That's all I have left to hope for at this point. Kevin is a 39-year old man who doesn't need someone to hold his hand about what to do with his life. He alone makes the decisions about his life and he will have to face the consequences of his actions at some point. Hopefully he'll have a "later" to get to it.

It was so good to see my skinny momma looking so good following her gastric bypass surgery three years ago. But the woman eats worse than a bird does nibbling on about three or four bites of food and then stopping. Amazing! Yet she looks absolutely fantastic and I'm so proud of her.

My stepdad pulled out his glucose meter on Saturday to check his blood sugar and wanted to see what reading everyone else had. My mom was in the 160s, my wife Christine was in the 120s, and Kevin refused to have his checked (maybe 300+ after that brownie bonanza?!). So he came to me and his jaw dropped to the floor when he saw my reading was 86.

He asked me if I was feeling okay and I said I felt perfectly fine. He said that my blood sugar was a little on the low-side. I told him that's pretty normal for someone who is controlling his carb intake to manage his weight and health. Let's just say it left an indelible impression on him that may have him counting carbs and watching his sugar. THAT is the power of being an example for others to follow.

Overall, the time away was amazing except for the fact that I missed blogging for you while I was gone. But I promised Christine I would not blog, so I didn't. Now I'm back in the saddle ready to keep providing you quality content that you can use as part of your low-carb lifestyle. THANK YOU for giving me a few days off and I look forward to the year 2007 which will be here before you know it!

Hopefully, my brother Kevin will make 2007 his banner year for a comeback with his weight and health. Otherwise, I don't think he's gonna have any more chances. YOU CAN DO IT, KEVIN! JUST DON'T GIVE UP! DON'T EVER GIVE UP!

The Easiest Low-Carb Pumpkin Cheesecake You'll Ever Make

Do you want a quick last-minute low-carb dessert recipe to make just in time for the holidays? Then you will want to try this very easy low-carb pumpkin cheesecake recipe that one of my readers sent to me.

It looks amazing and the directions for making it couldn't be any more simple. Let me know how this works out for you if you decide to do it. ENJOY!

LOW-CARB PUMPKIN CHEESECAKE

1 16 oz can of pumpkin (not the pie filling)
2 cups of Ricotta cheese
1 package of orange flavor sugar-free Jell-o
1-2 Tablespoons pumpkin pie spices to taste
Whipped cream


Mix all ingredients in a microwavable bowl until well mixed. Cook in the microwave at full power for 3 minutes. Remove and stir. Cook for another 3 minutes and stir again. Pour bowl contents into a serving dish and refrigerate for 1-2 hours to set. Serve in slices or as scoops with a whipped cream dollop on top.

Contacted By The Man Who Inspired My Weight Loss With His Low-Carb Success

For those of you who bought a copy of my autobiographical book about my low-carb weight loss experience called Livin' La Vida Low-Carb: My Journey from Flabby Fat to Sensationally Skinny In One Year, you may recall the name Keith Jackson from Chapter 5 on motivation.

Here's what I wrote about Keith on page 67 of my book:

"Keith and I were in the same high school class at Bolivar Central High School in Bolivar, TN in the late 1980s. Like me, Keith was overweight when he was in high school. But I could not believe my eyes at my 10-year high school class reunion in 1999 when somebody told me that skinny man with the goatee I inquired about was none other than Keith Jackson himself. I remember staring at him for what seemed like an eternity completely mesmerized by his incredibly radical change in appearance. This former chubby classmate of mine had dropped a considerable amount of his weight and restored his health by implementing a low-carb program. Although I was still skeptical of the low-carb lifestyle at the time, I never forgot the dramatic change in Keith's physical appearance."

I never got a chance to personally thank Keith for the impact he made on my life, but I was hoping to do so at my 20-year high school class reunion in 2009. But, as fate would have it, I didn't have to wait that long because Keith himself found my blog on Monday and stumbled upon this blog post where I had written about his influence on my life.

Quoting from that post, here's what I said about Keith Jackson:

"I have another one of my high school classmates to thank for being an inspiration to me to begin livin' la vida low-carb and he may not even realize it...My fellow classmate Keith Jackson showed up at a social we had at the high school on the Friday night before our reunion and everyone looked at him with their jaws on the floor. Keith Jackson, who had been a rather hefty young man, was...well, SKINNY! He was merely a shadow of his former self and certainly amazed most of us who knew him when he was 'bigger.' When he said he did it on the Atkins diet, I was skeptical about the method he chose. As you know, I chose to go on a low-fat diet that year and did well on it, but couldn't keep the weight off. The image of Keith Jackson was indelibly burned into my memory and he was one of my personal inspirations to start my Atkins diet on January 1, 2004. I hope to have the opportunity to shake Keith's hand at our upcoming reunion to THANK him for helping me change my life. And he probably has no idea he did anything!"

After reading what I had written, Keith was moved to e-mail me back:

Jimmy,

Congratulations on your weight loss!!!!! Words cannot express the emotions I had when I read your blog. You were right I had NO idea that I had been an "inspiration" to anyone about anything, and still would not have known had I not by some fluke Googled my own name.

I really think that saying I was "hefty" was very kind of you. As I recall I was just downright FAT! LOL! Having that in my history, I am always proud when someone loses weight whether it is great or small.

I applaud you for what you are doing to help so many people with a problem that without help is not easily solved. Up to this point in my life, I could have only hoped that I would have had an impact on someone's life for the better. Now after reading your blog I feel that if I do nothing else in my life I have accomplished this goal.

Needless to say, I will definitely go get your book. That is the least I can do for someone that is going to make me famous. LOL!

Keith Jackson


That's the power of a life that's been changed. If you have been positively impacted by my nearly 200-pound low-carb weight loss success story, then you have Keith Jackson in part to thank for that. Don't ever underestimate how even a brief encounter with someone in your life who needs to lose weight can result in the motivation and inspiration for them to really do it.

That 15 or so minutes when I saw Keith in 1999 changed my life forever. It wasn't instantaneous, but the seed was planted and came to fruition in 2004 when I DID IT! And I'll never be the same again. THANK YOU Keith!

He sent me a follow-up e-mail about another one of our "big" classmates who had also lost a lot of weight on low-carb and now runs 10 miles several times a week and competes in marathons. Think of the biggest kid in your high school class being able to run marathons and that's how amazing this story is. The neat thing is that guy is an honestly "good" person who always tried to make people laugh. I'm so thrilled to hear he has improved his weight and health so much by livin' la vida low-carb!

I called Keith on the telephone and spoke with him about 30 minutes on Monday night. I told him that I would love to feature his weight loss story on my blog if he would be willing. He seemed interested in doing that, so stay tuned. I asked if he had any contact information on the other classmate who lost weight on low-carb and Keith said he would try to get that for me so possibly I could post his success story as well.

The Internet and blogging has made this a small world, hasn't it? I'm grateful in this week of Thanksgiving that my high school friend Keith Jackson was able to know just how much he changed my life for the better. That's something I will never, ever be able to adequately repay him except by continuing to share with others what livin' la vida low-carb has done for me. You bet your sweet bippy I'll keep doing that! :)

Just Because It's Thanksgiving Doesn't Mean You Have To Pig Out

It's the week of Thanksgiving as we check in for Week 16 of the "30-in-30" Low-Carb Weight Loss Challenge. Did you do well this week? Here's my current progress in the challenge:



That would be NO CHANGE in my weight last week (still at my lowest weight of 215, though!), but that's a good thing headed into Thanksgiving week. Millions of people will be stuffing themselves until they're full and beyond on Thursday and then grazing all weekend on the leftovers.

Sure, the turkey and ham are good for you to eat, but what about all the rest of that spread of high-carb foods like dressing, cranberry sauce, homemade pumpkin pie, and so much more that we Americans have become accustomed to on Thanksgiving? Food, food, and more food is EVERYWHERE!

DOES THIS DAY MAKE YOU GO ABSOLUTELY BONKERS OR WHAT?!

Don't worry because we're all in this thing together. Thanksgiving is an opportunity to prove to yourself that you have made this a permanent lifestyle change that you can and will live with for the rest of your life.

There's no use in trying to conform to societal standards when you are trying to lose weight, get healthy and stay healthy. Who cares that everyone else will be shoving food in their mouths so fast they can barely stop and savor the reason for this special day of gratitude.

Want Some Low-Carb Egg Nog French Toast?


Combining a classic taste of the holidays with low-carb bread

Tis' the season to be egg-noggin', fa la la la la, la la la la...

Hey low-carb officianados, you caught me in the mood for singing carols today because I've got a peculiar recipe to share with you that takes a popular flavor of the Christmas season and infuses it into a breakfast favorite.

Egg nog is one of those uniquely Christmastime pleasures that make waiting for the holidays to come worthwhile. So how about treating your family and guests in your home this year to an Egg Nog French Toast? Oh yeah, and it's low-carb, too! You better believe it, baby!

The secret is the amazing DaVinci Sugar Free Egg Nog Flavored Syrup along with Irene's Low Carb White Bread. At just 4g carbs per slice, you can't beat this delightful holiday treat. LOW-CARB EGG NOG FRENCH TOAST

Irene's Low Carb White Bread
1/2 cup heavy cream mixed with 1/2 cup water
1/2 cup DaVinci Sugar Free Egg Nog Flavored Syrup
3 eggs
1/4 teaspoon salt
1 tablespoon butter
1 tablespoon canola oil
Powdered cinnamon
Splenda
Fresh strawberries


1. Mix cream mixture, eggs, Da Vinci Sugar Free Egg Nog Syrup and salt in a shallow bowl. Dip bread slices into mixture until saturated.

2. Heat butter and oil in a large nonstick skillet. Cook slices in batches 5-6 minutes per side until golden brown. Do not crowd skillet. Add more butter and oil to skillet as needed. Transfer cooked slices to baking sheet to keep warm while cooking remaining slices.

3. Sprinkles slices with cinnamon and Splenda. Finally, garnish with fresh strawberries.

Christine and I will be traveling down to Florida for the extended holiday weekend to surprise my brother Kevin since we don't know how much longer he may be with us (THANK YOU for your continued prayers!). We are so excited about getting away for a few days to be with family (although that'll mean NO BLOGGING for a few days--EEEEEK!).

Thanksgiving is an odd day for low-carbers. The centerpiece dish--THE TURKEY--is indeed low-carb, but just about everything else is whacked out on carbs! Wussup with that?! Sadly, most people fill up their Thanksgiving dinner table with carb-loaded foods like stuffing, mashed potatoes, biscuits, cranberry sauce, gravy and so much more, but let me tell you about a few of my favorite low-carb versions of these same foods that will keep you livin' la vida low-carb even through Thanksgiving! :)

Your Low-Carb Holiday Survival Guide

It's almost November, can you believe it?! Before you know it, we'll be in what has been commonly referred to as "the most wonderful time of the year." That's right, it's the holiday season with all the festive fellowships, family gatherings, and...oh yeah, LOTS OF FOOD to add a little temptation to your low-carb lifestyle! EEEEEEK!

Human beings have a strange way of letting things like social pressures and the innate desire to feel connected to those around us that keeps us from staying committed to our diets during the holidays. Oh, don't play dumb with me, you know what I mean: buffets of high-carb foods, tempting desserts, and food constantly at your fingertips defines this time of year. Good thing it only lasts a couple of months or we'd all be a bunch of bouncing beach balls walking around!

But this is a good lesson in sticking with your low-carb plan through the holidays by staying focused on the lifestyle changes you have made. You know you will want to continue on with your success long after Thanksgiving and Christmas are gone, so why give in during these 6-8 weeks of the year? Don't fall for the trap that you must eat, eat, eat away at all that junk food you will feast your eyes on during the holidays just to "fit in." That is the most ridiculous thing I've ever heard of!

That's some outstanding advice, Kent! You and I both know how important it is to keep your eye on what is best for you because that is a decision you have to make ahead of time when you start livin' la vida low-carb. Nothing (and I do mean ABSOLUTELY nothing!) should ever get in the way of your low-carb lifestyle. That's why it is called a "lifestyle change" and not just a diet.

If you feel tempted and want to pig out during the holidays, then the transformation in your mind towards eating healthy has not happened yet. That's okay because you WILL get there the longer you stay on low-carb. But giving in because you think you are too weak to resist is UNACCEPTABLE because you will only make yourself MORE depressed when you put on 10, 15, or 20 pounds during the holidays. Don't allow that guilty feeling to hit you and simply dedicate yourself to your low-carb life.

Because this can be difficult for some people to handle, Kent offers you some practical strategies for dealing with the inevitable confrontations you will have with those high-carb foods and the well-meaning folks trying to peddle it to you:

- Be the cook or bring your own low-carb food to holiday functions
- Do more socializing with others instead of mindlessly eating
- Keep yourself busy with activities during the family functions

SUPER TIPS, Kent! Holidays can be stressful, but that doesn't mean your low-carb plan should suffer. Who knows, you may just impress some of your friends and family who may not even know you've lost weight. In fact, don't be surprised if they ask you what you've been doing to shed the pounds so effectively. That's when you can look back at them with a twinkle in your eyes and proudly declare, "I've been livin' la vida low-carb, baby!" You tell 'em! :D
