Jimmy's One-Minute Low-Carb Chocolate Delight

I was playing around in the kitchen yesterday and stumbled upon a low-carb chocolate dessert recipe that should fit within ANYBODY'S low-carb plan. If you need a quick chocolate fix on your low-carb diet, then this will do the trick! ENJOY!

JIMMY'S ONE-MINUTE LOW-CARB CHOCOLATE DELIGHT

1 50mL bottle of your favorite flavor of DaVinci Syrups (I used Irish Cream!)
1-2 Tablespoons of Hershey's Cocoa (I LOVE Special Dark!)
1-2 packets of your favorite sweetener (You can use Splenda, but I used erythritol in my recipe!)


Gather all of your ingredients and a small bowl and spoon.



Pour the DaVinci Syrup into the bowl.



Next scoop out 1-2 Tablespoons of the cocoa. Use more to make it thicker or less for a thinner consistency.



Then add your sweetener. Erythritol worked great for my recipe, but so will Splenda, stevia, or any other artificial sweetener that you love.



Stir this yummy concoction slowly with a spoon. If you do it too fast, the cocoa will spill on the counter.



Be sure to break up any bubbles or pockets of the cocoa so that it all gets thoroughly drenched. Otherwise, you could get some unsweetened cocoa in your mouth which isn't very pleasant! :S



After about 30 seconds of stirring, scraping the sides of the bowl often, you should have a nice smooth, velvety chocolate mixture that resembles melted chocolate. Ooh la la!



Oh, man, just look at that--it'll make you slap your momma silly, I'm telling you. But now it's time for the taste test...



Mmmmmm...did I die and go to chocolate heaven or what?! WOO WEE, that's so good! I even got some dribbling down my bottom lip. Hee hee!

What pray tell is the nutritional lowdown on this decadent chocolate dessert? This is the BEST part:

FAT--.5g
CARBS--2-3g (depending on your sweetener)
CALORIES--40

If you just have to have something quick that's a little sweet and chocolately to eat when you are livin' la vida low-carb, then this stuff is da BOMB!

For a twist on the dessert eaten at room temperature, try microwaving it for 15-20 seconds for a luscious hot melted chocolate or freezing it for a fudge-like consistency. Play around with it using different DaVinci syrups and sweeteners until you find something that suits your tastes.

Jimmy's Stuffed Low-Carb Chocolate French Toast


Sugar-free ChocoPerfection bars make this recipe magnificent!

My wife Christine loves spending Saturday afternoons watching PBS and the endless of array of cooking shows back to back to back. Some of them are quite entertaining, yet there's not a single "low-carb" cooking show among them. Too bad they can't run Low-Carb Cookworx cooking show with Drs. Michael and Mary Dan Eades at that time because they're like the only one left nowadays. I wonder if they'd consider a "Livin' La Vida Low-Carb Cooking Show"--IN MY DREAMS!

Hey, I do like to cook, so when I see a "regular" recipe I can adapt, then I give it a whirl. When I was watching one of the cooking shows with Christine, there was a simple recipe for making chocolate "Monte Cristo"-like sandwiches in the skillet using bread and chocolate. Hmm, I've got low-carb versions of both of those foods, so why couldn't I make it myself? And so I did.

Christine was so impressed these turned out so well that she couldn't even finish one of them. They are quite rich and will satisfy your sweet tooth quite well. They look beautiful and taste out of this world. Thanks to the Irene's Low-Carb White Bread and the ChocoPerfection chocolate bars, this recipe is a low-carb chocolate lover's delight! ENJOY!

JIMMY'S STUFFED LOW-CARB CHOCOLATE FRENCH TOAST

1/2 stick butter
2 eggs
1/4 cup heavy cream
2 Tablespoons of Caramel DaVinci Syrup (or your favorite flavor)
4 slices of Irene's Low-Carb White Bread
2 chilled ChocoPerfection chocolate bars (dark or milk)
1 Tablespoon SweetPerfection


1. Place a large nonstick skillet on medium heat and allow the butter to melt.

2. In a medium bowl, scramble the eggs with the heavy cream and DaVinci syrup until thoroughly mixed. Set aside.

3. Put two slices of bread on a plate, break off 3-4 ChocoPerfection bar squares that have been refrigerated, and arrange them in the center of one of the slices of bread. Repeat for the second slice of bread.

4. Take the other two slices of bread and put them on top of the chocolate to make a sandwich. Carefully grab one of the chocolate sandwiches being very careful to not let the chocolate drop out and dip it in the egg mixture on one side. Then gingerly flip it over and submerge the chocolate sandwich in the egg mixture on the other side until well coated. Place in the skillet with the melted butter and repeat with the second sandwich.

5. Cook for about 2 minutes watching to make sure the chocolate is not seeping out. Don't allow the chocolate to burn or it won't taste very good.

6. When the bread becomes a beautiful golden brown, use a large spatula to delicately turn it over to cook on the other side for an additional 1-2 minutes.

7. Remove from the skillet and place on a paper towel to cool for about 1-2 minutes. Cut the sandwiches in half down the middle and place on a serving plate. Dust with SweetPerfection and serve hot! They'll be begging for more! :)

Carbohydrates 5g per half sandwich

LOW-CARB EGG NOG FRENCH TOAST

Irene's Low Carb White Bread
1/2 cup heavy cream mixed with 1/2 cup water
1/2 cup DaVinci Sugar Free Egg Nog Flavored Syrup
3 eggs
1/4 teaspoon salt
1 tablespoon butter
1 tablespoon canola oil
Powdered cinnamon
Splenda
Fresh strawberries


1. Mix cream mixture, eggs, Da Vinci Sugar Free Egg Nog Syrup and salt in a shallow bowl. Dip bread slices into mixture until saturated.

2. Heat butter and oil in a large nonstick skillet. Cook slices in batches 5-6 minutes per side until golden brown. Do not crowd skillet. Add more butter and oil to skillet as needed. Transfer cooked slices to baking sheet to keep warm while cooking remaining slices.

3. Sprinkles slices with cinnamon and Splenda. Finally, garnish with fresh strawberries.

A Holiday Classic: Low-Carb Gingerbread New York Style Cheesecake

Nothing beats a well-made cheesecake just about any time of the year. But when Thanksgiving and Christmas roll around each year, there's something special about creating this decadent and delightful dessert for friends and family members.

Your cheesecake need not be loaded with carbohydrates either and I've got just the recipe for you, too! Using the unique secret ingredient--DaVinci Gingerbread Syrup--this is a cheesecake you can be proud of and delight your guests with whether they are livin' la vida low-carb or not. You'll make this recipe a holiday tradition for many years to come!

LOW-CARB GINGERBREAD NEW YORK STYLE CHEESECAKE

1 cup Now almond flour
6 Tablespoons Splenda
4 Tablespoons butter, melted
5 (8-oz) packages full-fat cream cheese, softened
1 1/2 cups Splenda
1 Tablespoon Oat Flour
1 Tablespoon Singing Dog Sugar-Free Vanilla Extract
3 eggs
3/4 cup sour cream
1/4 cup DaVinci Gingerbread Syrup


Preheat oven to 350°F.

Mix the first three ingredients and then press into bottom of springform pan.

Mix cream cheese, Splenda, flour, Da Vinci Gingerbread syrup and vanilla with an electric mixer until blended. Add eggs one at a time, mixing on low after each, just until blended. Blend in sour cream and pour over crust.

Bake 65-70 minutes or until center is almost set. Run knife around the rim of the pan to loosen cake and allow to cool before removing the springform pan ring. Refrigerate overnight.

Total carbohydrates: 97.3g
At 20 servings: 4.8g carbs per slice
At 24 servings: 4g carbs per slice
